I restored a 65 Falcon Ranchero about 8 years ago and found a 351W to put into it.
With a T5 trans, Explorer rear with 4.10 gears, Eaton posi and 9 inch wide drag radials it ran 13.4 @ 105, even with the stock small valve heads.
Underneath there isn't much difference between similar year Falcons and Mustangs.
I did have problems getting factory quality replacement parts when it came to stuff like body rubber, switches, gauges, hinges, latches, etc,
With the much more popular Mustang I think parts support will always be pretty good.
